What Is Ube?
Ube is a purple yam commonly used in Filipino desserts and drinks. It has a mild, subtly sweet flavor that is often described as slightly nutty with notes of vanilla.
Ube powder and ube purée can vary in strength, sweetness and color. Begin with one teaspoon, then add more until you reach your preferred flavor and shade of purple. If your ube product is already sweetened, you may wish to reduce or omit the maple syrup.
Does Ube Have Nutritional Benefits?
Ube is a purple yam that naturally contains carbohydrates, fiber, potassium, vitamin C and colorful plant compounds called anthocyanins. Because this recipe uses only a small amount, ube primarily contributes its distinctive color and subtly sweet, nutty flavor. Nutritional values can vary considerably between ube powders and purées, particularly if the product contains added sugar or other ingredients.
Tips for the Best Ube Matcha
Use cold water when mixing the whey protein for the smoothest consistency. A protein shaker, milk frother or blender will help the ube and protein combine evenly.
Whisk the matcha with warm—not boiling—water. Water that is too hot can give matcha a more bitter flavor. Let it cool before assembling the drink so it doesn’t melt the ice too quickly.
For more defined layers, add plenty of ice and slowly pour the ube protein mixture over the back of a spoon. Once you have admired the layers, stir everything together before drinking.
Creamy, colorful and packed with protein, this Ube Matcha Protein Drink makes a refreshing morning pick-me-up, afternoon drink or addition to your post-workout routine.
