INGREDIENTS
- 2 cups all-purpose flour
- 3 tablespoons brown sugar
- 2 scoops TAHA Protein Powder
- 1½ teaspoons baking powder
- 1½ teaspoons baking soda
- 1¼ teaspoons kosher salt
- 2½ cups buttermilk
- 2 large eggs
- 3 tablespoons olive oil
- Vegetable oil or butter (for cooking)
METHOD
- In a large mixing bowl, whisk together the flour, brown sugar, TAHA Protein Powder, baking powder, baking soda, and salt.
- Create a well in the center of the dry ingredients. Pour in the buttermilk, crack the eggs into the buttermilk, and add the olive oil.
- Starting in the center, whisk everything together until just combined. Be careful not to overmix—small lumps are totally fine!
- Heat a cast-iron skillet or non-stick pan over low heat for about 5 minutes. Add a bit of butter or oil to coat the surface. Test the heat with a mini pancake to make sure it’s ready and non-stick.
- For regular pancakes, ladle about ⅓ cup of batter into the pan for each one. Cook until bubbles form on the surface and the bottom is golden brown—about 2 to 4 minutes—then flip and cook for another minute or two.
