This is a delicious dip with classic combinations of feta and mint. The soft cashews add a sweet earthiness to the balance.

INGREDIENTS:
- 3/4 cup raw cashews (softened before use with boiling water)
- 1 scoop TAHA Natural Protein Powder
- 75mls of water
- 12 oz feta
- 1/2 cup chopped fresh mint
- a healthy grind of cracked black pepper
METHOD:
- In a heat-proof container, submerge cashews in boiling water and sit for 30 minutes.
- In a blender, blend protein powder with water.
- Add cashews and blend at high speed until smooth.
- Add feta and blend.
- Stir through fresh mint and cracked pepper to retain texture.
Note:
- Dip crudités in it. Spread on sandwiches or gourmet vegetarian burgers.
