Feta, mint, raw cashew and cracked pepper protein dip

This is a delicious dip with classic combinations of feta and mint. The soft cashews add a sweet earthiness to the balance.

Soaking time: 30 minutes
Cooking time: 5 minutes

INGREDIENTS:

  • 3/4 cup raw cashews (softened before use with boiling water)
  • 1 scoop TAHA Natural Protein Powder
  • 75mls of water
  • 12 oz feta
  • 1/2 cup chopped fresh mint
  • a healthy grind of cracked black pepper

METHOD:

  • In a heat-proof container, submerge cashews in boiling water and sit for 30 minutes.
  • In a blender, blend protein powder with water.
  • Add cashews and blend at high speed until smooth.
  • Add feta and blend.
  • Stir through fresh mint and cracked pepper to retain texture.


Note:

  • Dip crudités in it. Spread on sandwiches or gourmet vegetarian burgers.
