Protein egg cups

Start your morning or have a tasty snack with a burst of flavor and nutrition! These delicious muffin tin tortillas, packed with red peppers and TAHA’s grass-fed, free-range whey protein, offer a wholesome, protein-rich breakfast or snack. Perfectly balanced for taste and health, they’ll keep you fueled and satisfied throughout the day!

Prep time: 10 minutes
Cook time: 10-15 minutes
Makes: 12 egg muffins

INGREDIENTS:

  • 2 scoops TAHA natural protein powder
  • 1/2 cup milk
  • 8 eggs
  • 1/2 cup finely chopped peppers and onions (mushrooms, spring onions, ham and other omelette ingredients can also be used)
  • Freshly ground pepper 
  • Sea salt
  • 1/2 cup grated cheese, we used Gouda 
  • 4 flour tortillas 


METHOD:

  1. Preheat oven to 480°F (250°C). 
  2. Oil muffin tin.
  3. Roll two tortillas together and hold against bottom of muffin tin, cut with scissors at the top of muffin tin so that a spiral forms in the tin recess. Repeat for the rest of the muffin tin.
  4. Whisk protein powder and milk together until it forms a paste. 
  5. Add eggs and whisk until combined. 
  6. Add chopped pepper and onion to eggs and season with salt and pepper. 
  7. Pour egg mixture over tortillas. 
  8. Sprinkle cheese on top. 
  9. Bake in oven for 10-15 minutes, paying close attention to ensure they do not burn.
