Makes: 12 egg muffins
INGREDIENTS:
- 2 scoops TAHA natural protein powder
- 1/2 cup milk
- 8 eggs
- 1/2 cup finely chopped peppers and onions (mushrooms, spring onions, ham and other omelette ingredients can also be used)
- Freshly ground pepper
- Sea salt
- 1/2 cup grated cheese, we used Gouda
- 4 flour tortillas
METHOD:
- Preheat oven to 480°F (250°C).
- Oil muffin tin.
- Roll two tortillas together and hold against bottom of muffin tin, cut with scissors at the top of muffin tin so that a spiral forms in the tin recess. Repeat for the rest of the muffin tin.
- Whisk protein powder and milk together until it forms a paste.
- Add eggs and whisk until combined.
- Add chopped pepper and onion to eggs and season with salt and pepper.
- Pour egg mixture over tortillas.
- Sprinkle cheese on top.
- Bake in oven for 10-15 minutes, paying close attention to ensure they do not burn.
